Shaved Brussels Caesar Salad with Crispy Oyster Mushrooms

A perfect lunch meal to use those oyster mushies 🥬

Shaved Brussels Caesar Salad with Crispy Oyster Mushrooms



4 cups Brussels sprouts

1/3 cup Parmesan, grated

Olive oil


1 tbsp olive oil

4 oz oyster mushrooms, broken up into pieces

1/2 tsp smoked paprika

Pinch of salt and black pepper

Caesar dressing (or use store bought)

4 anchovy filets

4 cloves garlic, finely minced

2 tbsp Dijon mustard

1.5 tbsp mayonnaise

Juice of 1 lemon

3 tbsp olive oil


  1. Mushrooms: On medium high heat, saute your mushrooms with the oil and spices, stirring occasionally until crispy and brown
  2. Dressing: Using two forks, mash your garlic and anchovies together in a large bowl. Add the mustard, mayo, and lemon juice, and whisk until smooth. Slowly whisk in the olive oil.
  3. Salad: Using a food processor, pulse your Brussels sprouts to shave them. Add to the bowl along with the Parmesan, mix together, and top with crispy mushrooms and black pepper.
